Chicken and Chorizo Empanadas Recipe

Chicken and Chorizo Empanadas are best to eat as snacks. You can serve them with soft drink, juice or tea. This recipe can be made quickly and you just need 90 minutes to get it ready. Mostly the youngsters prefer to eat Chicken and Chorizo Empanadas in evening time. Recipe of this dish is also simple and its ingredients are as follows:-

Ingredients

For making Empanada Dough

  • Beaten egg = 1
  • Unsalted butter = 150gram/ 5 ½ oz
  • Free range lightly beaten = 1
  • Plain flour = 300gram/ 10 ½ oz
  • Salt large pinch

For Filling

  • Pepper and salt = as per taste
  • Raisins 50 gram/ ¾ oz
  • Olive oil = 1 tbsp
  • Crushed garlic clove = 1
  • Cumin seeds = ½ tsp
  • Finely diced chorizo of British-Style = 100gram/ 3 ½ oz
  • Finely chopped onion = 1
  • Chicken thighs (along with skin and bone) = 4

Chicken and Chorizo Empanadas Recipe

Preparation

Preheat the oven at 180 C or 350 F. Take a small size roasting dish and add chicken thighs. Use pepper and salt for seasoning. Roast it for 45 minutes so that it is cooked thoroughly. Now allow it to cool. In the meantime, prepare pastry. Take butter and melt it. After that, allow the melted butter to slightly cool. Take a big size bowl and mix flour and salt in it. Also add egg and butter. Mix all these ingredients by adding 3 to 5 tbsp water so as to get soft dough. Place it on a dirt-free place and gently mold it for few minutes. Now place dough in a bowl and cover it.

Heat frying pan on medium heat by adding some oil. Put onion and heat it for 10 to 12 minutes for making it soft. Now add raisins, chorizo, garlic and cumin seeds. Cook all of them for 6-8 minutes using medium heat. Keep on stirring so that chorizo is fully cooked. Take away the pan from heat. Remove skin from chicken thighs once these are cool. Also heave the entire meat from their bones. Roughly chop it and put in the mixture of chorizo. Now taste to know about the saltiness of chorizo. Add more pepper and salt if required.

Again preheat the oven at 200 C or 400 F. Place a big size baking tray and a baking parchment. Sprinkle some flour on clean working surface. Roll the prepared dough to keep its thickness at 3-4mm. Make 10 discs of same size by using small bowl or 12cm of cutter. Put filling in discs and fold it like a semi circle. Push together all edges by using fork. Place empanadas on baking tray. Use beaten egg for brushing the empanadas and bake it for 15 to 20 minutes until it become golden brown. Your dish is ready to eat and you can serve it with different sauces.
