I have my own personal experience of making different varieties of cakes. When making cake, if anyone of you has complete ingredients and all measuring instruments then it becomes easy for making any cake. Some days back, I tried the recipe of Hummingbird Cake and it was totally same as I bought this cake from market. So, I want to share the recipe of Hummingbird Cake with all those who are trying to make different flavors of cakes.
Ingredients
- Softened butter : 1 cup
- Large eggs : 4
- Baking spray (Nonstick)
- Vanilla extract : 1 tablespoon
- Baking soda : 1 teaspoon
- Granulated sugar : 2 cups
- All purpose flour : 3 cups
- Salt : 1 teaspoon
- Ground cinnamon : 1 teaspoon
- Crushed pineapple (Can) : 8 ounce
- Buttermilk : 1/3 cup
- Mashed bananas : 1 ½ cups
For Garnishing
- Macadamia nuts (chopped)
- Flaked coconut (sweetened)
For Frosting
- Vanilla extract (pure) : 1 teaspoon
- Softened butter : 1 cup
- Softened cream cheese : 8 ounce
- Lemon juice : 1 tablespoon
- Confectioners’ sugar : 2 cups
Directions
1. First preheat your oven at 350 degrees F. Squirt three (9 inch) of baking pans along with baking spray (nonstick).
2. Take a large bowl and put vanilla, granulated sugar and butter in it and blend them well with electric and hand blender until become fluffy. Now put all eggs one by one and blend them well after all additions.
3. Take another bowl (medium) and then combine salt, cinnamon, baking soda and flour. Then add buttermilk and butter in it and again mix them all. Then add flour in it and combine well. Add pineapple and bananas and combine them well.
4. Using accurate cups and spoons for making any cake. Add the mixture in the baking tray and put them in the oven for 30-35 minutes. You can also check the puff of cake with help of wooden stick or knife. Take from the oven and leave them to cool.
5. Spreading some frosting among the layers and again spread remaining frosting at all sides and top of cake. You can garnish the cake with nuts and coconut, if you desire.
For Frosting
You can beat the cheese cream and butter with hand or electric mixer until become creamy and smooth. Also beat the confectioners’ sugar in to increments. In last you have to beat vanilla and lemon juice in it.
